I don't know if you are considering Macs, but I set up a nice system
with a iBook/MacOS X laptop checkout program in Santa Cruz. A script
replaces the user home directory with a default copy, which is run when
the laptop is turned in. Other areas of the drive are locked down to be
off-limits to the checkout user. If the drive needs to be re-imaged,
it's a snap with Carbon Copy Cloner and an external Firewire drive.
There's a lot of good information on various setups at
http://www.macosxlabs.org/

We also had a Windows checkout program using Ghost for imaging, but it
was much more difficult to manage, at least without having to buy
anything extra.
