The following AppleCare Knowledge Base article appears to list all
of Apple's security-related patches and updates for Mac OS X and Mac
OS X Server:
"Apple Security Updates"
http://docs.info.apple.com/article.html?artnum=61798
FYI. If Apple continues to keep this document updated, it may
serve as a handy reference ...
Note that the vast majority of these patches and updates are
available through Mac OS X's "Software Update" feature (accessed via
the "Software Update" preference pane in Mac OS X's System
Preferences), and by default, an automatic check for new updates is
performed weekly. As a result, Mac OS X users typically will not
need to manually scan this document in order to check that they've
applied all of the listed patches and updates.

P.S. This article also mentions one security update for the "Classic"
Mac OS, but does not mention other historical security patches and
updates for that OS.
(Even though there have been relatively few of these over the 18-year
history of that OS, several are not listed in this article.) Most of
these have been rolled directly into various operating system
releases, or are available separately for downloading through Mac OS
9's "Software Update" control panel.
